Easy Fried Rice: The Fast, Flexible Dinner I Make on Repeat

Some dinners are planned. Others are built from whatever’s left in the fridge — and honestly, those are often the best ones. Fried rice is my go‑to “use what you have” meal. It’s quick, it’s customizable, and it turns simple ingredients into something deeply satisfying.

The secret to great fried rice is surprisingly simple: cold, dried‑out rice. Fresh rice gets mushy, but rice that’s been sitting in the fridge for a few days crisps beautifully. I keep a container of brown rice in the fridge (no lid) so it naturally dries out and is ready whenever I need a fast, no‑stress dinner.

This past week, I made a version that was so good I had to write it down.


What I Used

  • 1 cup dried brown rice Cooked ahead of time and stored in the fridge for at least three days.

  • Veggies: onions, string beans, and peppers Fresh or leftover — anything works.

  • Protein: cubed leftover pork spare ribs Optional, but delicious.

  • Bachan’s Japanese BBQ Sauce The flavor-maker. Sweet, savory, umami perfection.

  • Olive oil For sautéing and crisping the rice.

How I Made It

Heat a large pan over medium‑high heat and add a little oil. Start with the onions — let them soften and caramelize so they build that sweet, savory base. Once they have some color, add your peppers and string beans (I cut mine into quarters so they cook quickly). Sauté everything for 2–3 minutes. You want the veggies bright and crisp, not overcooked. Transfer them to a bowl and set aside.

Return the pan to the stove and add a bit more oil — I use olive oil. Let it heat up, then add your cold, dried brown rice. If there’s any moisture left in the rice, be ready for a few pops and sizzles. (I always wear an apron for this part.)

Spread the rice into a thin, even layer and leave it alone for 90–120 seconds. This is where the crisping happens. Stir, flatten it again, and let it sit for another 90–120 seconds. Repeat this two or three more times until the rice develops color and those golden, toasty bits.

Add your protein — this week I used cubed leftover pork spare ribs, which added incredible flavor. Mix everything together until the protein is warmed through.

Add your veggies back in, pour in Bachan’s Japanese BBQ Sauce, and cook for another 2 minutes, stirring a few times to coat everything evenly.

And BAM — you’re done. A fast, flavorful dinner built entirely from leftovers.
